Mee siam (spicy tamarind rice vermicelli)
Tangy, spicy rice vermicelli in a tamarind and tofu gravy with beansprouts.

Ingredients
- 75 g Rice noodles
- 140 g Firm tofu
- ¾ tomato Tomatoes
- 2½ tsp Tamarind paste
- 2 chillis Red chillies
- 1½ tsp Sugar
- 60 g Bean sprouts
- ½ tbsp Sunflower oil
- ¼ lime Limes
Method
- Cook the rice vermicelli in boiling water for 3 minutes, drain.
- Pan-fry the tofu cubes in the oil for 5 minutes until golden, then set aside.
- Blend the chilli to a rough paste, fry briefly, then add tomato, tamarind water and sugar, simmer 8 minutes.
- Return the tofu to the gravy and warm through.
- Serve the noodles topped with the gravy, beansprouts and a squeeze of lime.
