Midye pilaki (mussels pilaf)
Mussels simmered with rice, onion and garlic, finished with lemon and parsley.

Ingredients
- 200 g Mussels
- 55 g Basmati rice
- ½ onion Onion
- 1 clove Garlic
- ½ tbsp Olive oil
- 5 g Parsley
- ¼ lemon Lemons
- ¼ tsp Salt
Method
- Warm the oil and cook the onion and garlic for 6 minutes until soft.
- Stir in the rice and 350ml water; cover and simmer for 12 minutes.
- Add the mussels, cover and cook for a further 5-6 minutes until they open and the rice is tender.
- Season with salt, scatter with parsley and serve with lemon wedges.
