Moroccan chickpea and spinach stew
A quick chickpea and spinach stew warmed through with cumin and paprika.

Ingredients
- 220 g Chickpeas (tinned, drained)
- 150 g Spinach
- 100 g Chopped tomatoes (tinned)
- ½ onion Onion
- 2 cloves Garlic
- ¾ tbsp Olive oil
- ¾ tsp Ground cumin
- ½ tsp Paprika
- 5 g Coriander
- ¼ tsp Salt
Method
- Warm the oil and cook the onion for 6 minutes until soft, then add the garlic and spices for a minute.
- Stir in the tomato tin and chickpeas and simmer for 10 minutes.
- Add the spinach and cook for 4 minutes until wilted.
- Season and finish with coriander.
