Otak-otak (spiced grilled fish parcels)
Silky spiced fish paste grilled until firm, fragrant with lemongrass and chilli.

Ingredients
- 180 g White fish fillets
- 60 ml Coconut milk
- 2 chillis Red chillies
- ½ stalk Lemongrass
- ¾ shallot Shallots
- ¾ tsp Turmeric
- ½ egg Eggs
- 55 g Jasmine rice
- ¼ cucumber Cucumber
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Blend the chilli, lemongrass, shallot and turmeric to a paste.
- Blitz the fish with the paste, coconut milk and egg until smooth and thick.
- Spoon into small foil parcels and steam or grill for 12 minutes until firm and cooked through.
- Serve with the rice and sliced cucumber.
