Pad thai gai (chicken pad thai)

Ingredients
- 75 g Rice noodles
- 110 g Chicken breast
- 1 egg Eggs
- 80 g Bean sprouts
- 15 g Spring onions
- 2 cloves Garlic
- 15 g Peanuts
- 1¾ tsp Tamarind paste
- 2 tsp Fish sauce
- 1½ tsp Sugar
- ½ tbsp Sunflower oil
- ¼ lime Limes
Method
- Soak the rice noodles in warm water until pliable, then drain.
- Heat the oil in a hot wok, stir-fry the garlic and chicken for 4 minutes until cooked.
- Push to one side, crack in the egg and scramble briefly, then mix everything together.
- Add the noodles, tamarind, fish sauce and sugar, tossing for 3 minutes until the noodles soften.
- Fold through beansprouts and spring onion, plate and scatter with crushed peanuts and a lime wedge.
