Pav bhaji (lighter)
Mashed mixed-vegetable curry with pav bhaji masala, served with toasted pav, butter kept light.

Ingredients
- 150 g Potatoes
- 70 g Cauliflower
- 40 g Green peas
- ¼ pepper Bell peppers
- ¾ tomato Tomatoes
- 1½ pavs Pav buns
- ½ tbsp Butter
- 1¼ tsp Pav bhaji masala
- ¼ tbsp Sunflower oil
- 5 g Coriander
- ¼ tsp Salt
Method
- Boil the potato and cauliflower until completely soft, then mash roughly.
- Heat the oil and half the butter, and cook the tomato and bell pepper for 6-8 minutes until pulpy.
- Stir in the pav bhaji masala and the mashed vegetables with the peas, mashing further as it cooks.
- Simmer 8-10 minutes, adding water to loosen if needed, and season with salt.
- Toast the split pav with the remaining butter and serve alongside the bhaji, topped with coriander.
