Salt and pepper squid
Crisp-fried squid tossed with garlic, chilli and spring onion, deeply savoury.

Ingredients
- 190 g Squid
- 2¾ tbsp Cornflour
- 2 cloves Garlic
- 1¼ chillis Green chillies
- 15 g Spring onions
- 65 g Jasmine rice
- ¾ tbsp Sunflower oil
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Cook the rice according to packet instructions.
- Toss the squid rings in cornflour to coat evenly.
- Heat the oil in a pan and fry the squid for 2-3 minutes until crisp and just cooked; do not overcook.
- Push the squid aside, add garlic and chilli to the oil and fry for 30 seconds until fragrant.
- Toss everything together with salt, pepper and spring onion, and serve immediately over the rice.
