Light, tangy vegetable soup with peanuts, corn and tamarind.

Ingredients
- 100 g Sweet corn
- 70 g Green beans
- ½ courgette Courgette
- 20 g Peanuts
- 2½ tsp Tamarind paste
- 1 tsp Sugar
- ¾ shallot Shallots
- 2 cloves Garlic
- 55 g Jasmine rice
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Fry the shallot and garlic in a splash of water or oil for 2 minutes in a soup pot.
- Add 500ml water, the corn, green beans and courgette, simmer 12 minutes until tender.
- Stir in the peanuts, tamarind and sugar, simmer 5 minutes more.
- Serve hot with the rice.
