Seafood chowder
A creamy chowder of white fish, prawns and mussels with potato and corn.

Ingredients
- 80 g White fish fillets
- 60 g Prawns
- 60 g Mussels
- 120 g Potatoes
- 50 g Sweet corn
- 150 ml Milk (semi-skimmed)
- ½ onion Onion
- ½ tbsp Olive oil
Method
- Heat the oil and cook the onion for 5 minutes until soft. Add the potato and a splash of water, cover and cook for 10 minutes.
- Add the milk and corn and bring to a gentle simmer.
- Add the fish, prawns and mussels, and cook for 5-6 minutes until the fish is opaque and the mussels open.
- Season to taste and serve hot. Discard any mussels that stay closed.
