Gentle ginger and garlic chicken soup with green papaya and spinach.

Ingredients
- 160 g Chicken thighs (boneless)
- 15 g Ginger
- 3 cloves Garlic
- ½ onion Onion
- 100 g Papaya
- 60 g Spinach
- 1¾ tsp Fish sauce
- 55 g Jasmine rice
- ½ tbsp Sunflower oil
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Fry the ginger, garlic and onion in the oil for 3 minutes until fragrant.
- Add the chicken and cook 3 minutes, then pour in 600ml water and simmer 15 minutes.
- Add the papaya and simmer 8 minutes until tender.
- Stir in the spinach to wilt, season with fish sauce and serve with the rice.
