Boondi raita
Curd raita with tiny fried gram-flour drops, a classic cooling side.

Ingredients
- 30 g Gram flour (besan)
- ½ tbsp Sunflower oil
- 170 g Plain yogurt (curd)
- 1 tsp Cumin seeds
- ¼ tsp Chilli powder
- ¼ tsp Salt
- 3 g Coriander
Method
- Whisk the besan with a little water into a thin, smooth batter.
- Drizzle through a slotted spoon into hot oil to form tiny drops; fry 2 minutes until golden, then drain.
- Whisk the curd until smooth, stir in the fried boondi and roasted cumin.
- Season with salt and chilli powder, and finish with coriander.
