Dal dhokli
Whole-wheat dumplings simmered in a sweet, sour and spiced toor dal, a Gujarati one-pot classic.

Ingredients
- 50 g Wholewheat flour (atta)
- 45 g Toor dal
- ½ tomato Tomatoes
- 15 g Peanuts
- 6 g Jaggery
- ¾ tsp Tamarind paste
- ½ tbsp Sunflower oil
- ¼ tsp Turmeric
- ¼ tsp Mustard seeds
- 2 g Curry leaves
- 4 g Coriander
- ¼ tsp Salt
Method
- Knead the atta with a little oil, turmeric and water into a firm dough; roll thin and cut into diamonds.
- Simmer the toor dal in three cups of water for 20 minutes until soft, then whisk smooth.
- Stir in the tomato, peanuts, jaggery and tamarind pulp, and simmer 10 minutes.
- Drop the dough diamonds into the simmering dal and cook 8-10 minutes, stirring occasionally, until tender.
- Heat the remaining oil, crackle mustard seeds and curry leaves, pour over the dal and finish with coriander.
