Gatte ki sabzi
Steamed and simmered gram-flour dumplings in a tangy Rajasthani yogurt curry, no onion or garlic.

Ingredients
- 90 g Gram flour (besan)
- 180 g Plain yogurt (curd)
- ¾ tbsp Sunflower oil
- ½ tsp Mustard seeds
- 1 tsp Cumin seeds
- ½ chilli Green chillies
- ¾ tsp Turmeric
- ¼ tsp Chilli powder
- ½ tsp Salt
- 5 g Coriander
- 55 g Basmati rice
Method
- Cook the rice in twice its volume of water for 12 minutes, covered.
- Knead 70g of the besan with a little oil, water and salt into a firm dough, roll into thin logs and steam for 15 minutes; slice into pieces.
- Whisk the curd with the remaining besan, turmeric and 350ml water until smooth.
- Heat oil, splutter mustard seeds, cumin and chilli, pour in the curd mixture and simmer gently 12 minutes, stirring so it doesn't split.
- Add the steamed gatte pieces, season with salt and chilli powder, simmer 5 minutes, finish with coriander, and serve with the rice.
