Ingredients
- 170 g Firm tofu
- 120 g Bottle gourd
- ½ tomato Tomatoes
- ¼ onion Onion
- 2 cloves Garlic
- 5 g Ginger
- ¾ tbsp Soy sauce (reduced salt)
- 60 g Jasmine rice
- 5 g Coriander
- ¼ tbsp Sunflower oil
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Fry the onion, garlic and ginger in the oil for 3 minutes until fragrant.
- Add 600ml water, the gourd and tomato, simmer 12 minutes until tender.
- Add the tofu, simmer 3 minutes to warm through, and season with soy sauce.
- Scatter with coriander and serve with the rice.
