Ingredients
- 250 g Potatoes
- 80 g Mackerel fillets
- 60 g Cottage cheese
- 10 g Spring onions
- ¼ lemon Lemons
Method
- Prick the potato and bake at 200°C for about 55-60 minutes until soft.
- Flake the mackerel and mix with the cottage cheese, spring onion and a squeeze of lemon.
- Cut the potato open and fluff the inside with a fork.
- Pile the mackerel mixture on top and serve.
