Jain-style matar paneer
Paneer and green peas in a light tomato gravy, made without onion or garlic.

Ingredients
- 110 g Paneer
- 90 g Green peas
- 1 tomato Tomatoes
- 1 tsp Cumin seeds
- 1 tsp Ground coriander
- ¼ tsp Chilli powder
- ¾ tbsp Sunflower oil
- ½ tsp Salt
- 5 g Coriander
- 55 g Basmati rice
Method
- Cook the rice in twice its volume of water for 12 minutes, covered.
- Heat oil, splutter cumin, add the puréed tomato, coriander powder and chilli powder, and cook 8 minutes until thick.
- Add the peas and a splash of water, cover and simmer 6 minutes.
- Add the paneer and salt, and simmer 3 minutes.
- Finish with coriander and serve with the rice.
