Kadhi pakora
Besan fritters simmered in a tangy, spiced yogurt curry, no onion needed in the pakoras.

Ingredients
- 70 g Gram flour (besan)
- 180 g Plain yogurt (curd)
- 1 tbsp Sunflower oil
- ½ tsp Mustard seeds
- 1 tsp Cumin seeds
- ½ chilli Green chillies
- ¾ tsp Turmeric
- ¼ tsp Chilli powder
- ½ tsp Salt
- 5 g Coriander
- 55 g Basmati rice
Method
- Cook the rice in twice its volume of water for 12 minutes, covered.
- Whisk 25g of the besan with a little water and salt into a thick batter, drop spoonfuls into hot oil and fry until golden; drain.
- Whisk the curd with the remaining besan, turmeric and 400ml water until smooth.
- Heat a little oil, splutter mustard seeds, cumin and chilli, pour in the curd mixture and simmer gently 15 minutes, stirring often, until thickened.
- Add the fried pakoras, season with salt and chilli powder, simmer 3 minutes, finish with coriander, and serve with the rice.
