Kumara and spinach hash with a fried egg
Pan-fried sweet potato and spinach hash topped with a runny fried egg.

Ingredients
- 200 g Sweet potatoes
- 60 g Spinach
- 2 eggs Eggs
- ¼ onion Onion
- ½ tbsp Olive oil
- ½ tsp Paprika
Method
- Grate the sweet potato and squeeze out any excess moisture.
- Heat half the oil and fry the onion for 4 minutes, then add the sweet potato and paprika and press flat.
- Cook for 8 minutes, turning once, until golden and tender. Stir in the spinach for the last 2 minutes.
- Fry the eggs in the remaining oil and serve on top of the hash.
