Lablabi (Tunisian chickpea soup)
A warming chickpea soup spiced with cumin and harissa, finished with lemon.

Ingredients
- 250 g Chickpeas (tinned, drained)
- 3 cloves Garlic
- 1¼ tsp Ground cumin
- 2 tsp Harissa
- ¾ tbsp Olive oil
- ¼ lemon Lemons
- 5 g Coriander
- 300 ml Vegetable stock
- ¼ tsp Salt
Method
- Warm the oil and cook the garlic and cumin for a minute until fragrant.
- Add the chickpeas and stock and simmer for 15 minutes.
- Stir in the harissa and lemon juice.
- Season and finish with coriander before serving.
