Malvani fish curry
A fiery, coconut-rich Konkan fish curry soured with tamarind, ladled over steamed rice.

Ingredients
- 150 g Mackerel fillets
- 25 g Fresh coconut
- ¼ onion Onion
- 1 clove Garlic
- 3 g Ginger
- ¾ tsp Tamarind paste
- 50 g Basmati rice
- ½ tbsp Sunflower oil
- ¼ tsp Turmeric
- ¾ tsp Chilli powder
- 4 g Coriander
- ¼ tsp Salt
Method
- Blend the coconut, onion, garlic, ginger, chilli powder and turmeric with a little water into a smooth masala.
- Heat the oil and fry the masala for 6-8 minutes until fragrant and the raw smell fades.
- Add the tamarind pulp and a cup of water, bring to a simmer.
- Slide in the fish and simmer gently for 10-12 minutes until just cooked through.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve the curry over the rice with coriander.
