Masala omelette curry
Spiced omelette strips simmered in a light tomato gravy, a clever way to stretch eggs into a full curry.

Ingredients
- 3 eggs Eggs
- ½ onion Onion
- ¾ tomato Tomatoes
- ½ chilli Green chillies
- ¼ tsp Turmeric
- ¼ tsp Chilli powder
- 1 tsp Ground coriander
- ¾ tbsp Sunflower oil
- ½ tsp Salt
- 5 g Coriander
- 55 g Basmati rice
Method
- Cook the rice in twice its volume of water for 12 minutes, covered.
- Beat the eggs with a little chopped onion, chilli and salt, and cook as a thick omelette; cool and cut into strips.
- Heat oil and cook the remaining onion for 5 minutes until golden, add tomato, turmeric, coriander powder and chilli powder and cook 6 minutes.
- Add a splash of water and simmer 4 minutes, then add the omelette strips and simmer 3 minutes to soak up the gravy.
- Finish with coriander and serve with the rice.
