Papad ki sabzi
A rustic Rajasthani curry of roasted papad simmered in a spiced besan-yogurt gravy, no onion or garlic.

Ingredients
- 3 papads Papad
- 25 g Gram flour (besan)
- 150 g Plain yogurt (curd)
- ¾ tbsp Sunflower oil
- ½ tsp Mustard seeds
- 1 tsp Cumin seeds
- ½ chilli Green chillies
- ¾ tsp Turmeric
- ¼ tsp Chilli powder
- ¼ tsp Salt
- 5 g Coriander
- 55 g Basmati rice
Method
- Cook the rice in twice its volume of water for 12 minutes, covered.
- Roast the papads over a flame or in a dry pan until crisp, then break into bite-sized pieces.
- Whisk the curd and besan with turmeric and 300ml water until smooth.
- Heat oil, splutter mustard seeds, cumin and chilli, pour in the curd mixture and simmer 10 minutes, stirring, until thickened.
- Add the papad pieces just before serving so they stay slightly crisp, season with salt and chilli powder, and serve with the rice.
