Ingredients
- 55 g Poha (flattened rice)
- 12 g Peanuts
- ¼ onion Onion
- 40 g Potatoes
- ¼ tsp Mustard seeds
- 2 g Curry leaves
- ¼ tsp Turmeric
- ½ tbsp Sunflower oil
- ¼ lemon Lemons
- 3 g Coriander
Method
- Rinse the poha in a sieve under cold water until softened, then drain well.
- Heat the oil and splutter the mustard seeds with curry leaves.
- Add the onion and potato, and cook for 8 minutes until the potato is tender.
- Stir in the turmeric and peanuts, then fold in the poha and cook for 2 minutes.
- Finish with lemon juice and coriander.
