Shan tofu thoke (Burmese chickpea tofu salad)
Cool cubes of chickpea tofu tossed with garlic oil, chilli and crispy shallot.

Ingredients
- 70 g Gram flour (besan)
- ¾ tsp Turmeric
- 2 cloves Garlic
- 1 chilli Red chillies
- ¾ shallot Shallots
- ¾ tbsp Soy sauce (reduced salt)
- ¼ lime Limes
- ½ tbsp Sunflower oil
- 5 g Coriander
Method
- Whisk the besan with 230ml water and turmeric until smooth, then cook over medium heat, stirring, for 8 minutes until very thick.
- Pour into a dish, cool for at least 20 minutes until firm, then cut into cubes.
- Fry the shallot in the oil until golden and crisp.
- Toss the tofu cubes gently with soy sauce, lime juice and chilli.
- Top with the crispy shallot and its oil, and scatter with coriander.
