Soba noodle salad with edamame
Chilled soba noodles tossed with edamame, carrot and a sesame-tamari dressing.

Ingredients
- 70 g Soba noodles
- 80 g Edamame
- ¾ carrot Carrots
- 20 g Spring onions
- 1 tsp Toasted sesame oil
- ¾ tbsp Tamari (gluten-free)
- ½ tbsp Rice vinegar
- 1 tsp Sesame seeds
Method
- Cook the soba noodles according to packet instructions, then drain and rinse under cold water.
- Boil the edamame for 4-5 minutes until tender, then drain.
- Toss the noodles with the edamame, carrot and spring onion.
- Whisk the sesame oil, tamari and rice vinegar, pour over, scatter with sesame seeds and serve cold.
