Swedish root vegetable and lentil stew
Comforting red lentil stew with sweet potato, carrot and leek.

Per serving, for one person.
Ingredients
- 70 g Red lentils (masoor dal)
- 1¼ carrots Carrots
- 100 g Sweet potatoes
- ½ onion Onion
- 50 g Leeks
- ½ tbsp Sunflower oil
- 1 tsp Dried thyme
- 200 ml Vegetable stock
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Fry the onion and leek in the oil for 6 minutes until softened.
- Add the carrot, sweet potato and thyme and cook for 3 minutes.
- Stir in the lentils and stock, cover and simmer for 20 minutes until the lentils and vegetables are tender.
- Season with salt and pepper and serve hot.
