Vegetable rava upma
Roasted semolina simmered with vegetables, mustard seeds and crunchy roasted chana.

Ingredients
- 50 g Semolina (rava/sooji)
- ¼ onion Onion
- ½ carrot Carrots
- 30 g Green peas
- 15 g Roasted chana
- ¼ tsp Mustard seeds
- 2 g Curry leaves
- ½ tbsp Sunflower oil
- ½ chilli Green chillies
- 3 g Ginger
- ¼ lemon Lemons
- 3 g Coriander
Method
- Dry-roast the semolina in a pan for 3-4 minutes until fragrant, then set aside.
- Heat the oil and splutter the mustard seeds with curry leaves, ginger and green chilli.
- Add the onion, carrot and peas, and cook for 5 minutes until softened.
- Add 450ml water, bring to a boil, then stir in the semolina in a steady stream to avoid lumps.
- Cover and cook on low for 3 minutes until fluffy. Finish with roasted chana, lemon juice and coriander.
