Zaru soba with vegetables
Chilled soba noodles with crisp vegetables and a savoury dipping sauce.

Ingredients
- 100 g Soba noodles
- ¼ cucumber Cucumber
- ¾ carrot Carrots
- 60 g Edamame
- 1 sheet Nori sheets
- 1¼ tbsp Soy sauce (reduced salt)
- 14 ml Mirin (rice cooking wine)
- 12 g Spring onions
- ¾ tsp Sesame seeds
Method
- Cook the soba according to packet instructions, then rinse under cold water until fully chilled.
- Boil the edamame for 4 minutes and drain.
- Warm the soy sauce and mirin gently with 60ml water to make a light dipping sauce.
- Arrange the chilled soba with cucumber, carrot and edamame, topped with nori strips and sesame seeds.
- Serve with the dipping sauce alongside for dunking.
