Brazilian black bean and rice bowl
Garlicky black beans over brown rice with peppers, onion and a bright squeeze of orange.

Ingredients
- 180 g Black beans (tinned, drained)
- 70 g Brown rice
- ½ pepper Bell peppers
- ¼ onion Onion
- 1 clove Garlic
- ½ orange Oranges
- 5 g Coriander
- ½ tbsp Olive oil
Method
- Cook the brown rice according to packet instructions.
- Warm the oil and cook the onion and bell pepper over medium heat for 6-7 minutes until softened.
- Add the garlic and black beans and simmer for 8-10 minutes, mashing a few beans to thicken.
- Squeeze over the orange juice, scatter with coriander and serve over the rice.
