A cold mezze of small stuffed vine leaves, bright with lemon and mint.

Ingredients
- 130 g Vine leaves (brined)
- 35 g Basmati rice
- ¼ onion Onion
- ¼ tomato Tomatoes
- 8 g Parsley
- 5 g Mint
- ½ tbsp Olive oil
- ¼ lemon Lemons
- ¼ tsp Salt
Method
- Mix the rice, onion, tomato, parsley, half the mint and half the oil with a pinch of salt.
- Lay out the vine leaves, spoon on the filling and roll up into small, tight cylinders.
- Pack into a pot, add the lemon juice, remaining oil and enough water to just cover; weigh down with a small plate.
- Cover and simmer gently for 25 minutes, then cool and chill before serving with the remaining mint.
