A rustic green lentil soup simmered with carrot, celery and tomato.

Ingredients
- 90 g Green lentils
- ¾ carrot Carrots
- 40 g Celery
- ½ onion Onion
- 100 g Chopped tomatoes (tinned)
- ¾ tbsp Olive oil
- 2 cloves Garlic
- ¼ tbsp Vinegar
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Warm the oil and cook the onion, carrot and celery for 8 minutes until softened.
- Add the garlic and cook for a minute, then stir in the lentils and tomato tin.
- Pour in plenty of water to cover well and simmer for 30 minutes until the lentils are tender.
- Stir in a splash of vinegar and season with salt and pepper before serving.
