Fasolada (Greek bean soup)
The Greek national dish - a hearty white bean soup with carrot, celery and tomato.

Per serving, for one person.
Ingredients
- 250 g Cannellini beans (tinned, drained)
- 1¼ carrots Carrots
- 60 g Celery
- ½ onion Onion
- 100 g Chopped tomatoes (tinned)
- ¾ tbsp Olive oil
- 2 cloves Garlic
- 1 tsp Dried oregano
- ¼ tsp Salt
- ½ tsp Black pepper
Method
- Warm the oil and cook the onion, carrot and celery for 10 minutes until softened.
- Add the garlic and cook for a minute, then stir in the tomato tin and beans.
- Pour in enough water to just cover, add the oregano and simmer for 20 minutes.
- Season with salt and pepper and serve with crusty bread on the side.
