Gigantes plaki (Greek baked beans in tomato sauce)
Giant beans slow-baked in a rich tomato, garlic and carrot sauce.

Ingredients
- 250 g Cannellini beans (tinned, drained)
- 150 g Chopped tomatoes (tinned)
- ½ onion Onion
- 2 cloves Garlic
- ¾ carrot Carrots
- ¾ tbsp Olive oil
- 1 tbsp Tomato purée
- 1 tsp Dried oregano
- ¼ tsp Salt
- 5 g Parsley
Method
- Warm the oil and cook the onion and carrot for 8 minutes until softened.
- Add the garlic and tomato purée and cook for 2 minutes.
- Stir in the tomato tin, beans and oregano, then simmer for 20 minutes, uncovered, until thickened.
- Season with salt and scatter with parsley before serving.
