Ginisang munggo (sauteed mung bean stew)

Ingredients
- 90 g Whole green moong
- ¾ tomato Tomatoes
- ½ onion Onion
- 3 cloves Garlic
- 80 g Spinach
- 55 g Jasmine rice
- ½ tbsp Sunflower oil
- ½ tbsp Soy sauce (reduced salt)
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Fry the garlic and onion in the oil for 3 minutes, add the tomato and cook until it breaks down, about 5 minutes.
- Add the mung beans and 500ml water, simmer 25 minutes until soft.
- Season with soy sauce, then stir in the spinach to wilt for 2 minutes.
- Serve with the rice.
