Japchae (vegetable glass noodle stir-fry)
Slippery sweet potato glass noodles stir-fried with colourful vegetables and sesame.

Ingredients
- 85 g Glass noodles
- 120 g Firm tofu
- 90 g Spinach
- ¾ carrot Carrots
- ½ pepper Bell peppers
- ½ onion Onion
- 60 g Mushrooms
- 2 cloves Garlic
- 1¼ tbsp Tamari (gluten-free)
- 1½ tsp Sugar
- 1½ tsp Toasted sesame oil
- ½ tbsp Sunflower oil
- ¾ tsp Sesame seeds
Method
- Soak the glass noodles in hot water for 8-10 minutes until soft, then drain and snip into shorter lengths.
- Blanch the spinach for 30 seconds, drain and squeeze dry. Pan-fry the tofu in a little oil until golden.
- Stir-fry the carrot, pepper, onion, mushroom and garlic in the oil for 4-5 minutes.
- Add the noodles, spinach, tofu, tamari, sugar and sesame oil, and toss over heat for 3-4 minutes until glossy.
- Scatter with sesame seeds to serve.
