Kerala vegetable stew
A gentle coconut milk stew of beans, peas and cauliflower, spiced with cinnamon and clove, no onion needed.

Ingredients
- 50 g Basmati rice
- 50 g Green beans
- 40 g Green peas
- 60 g Cauliflower
- 130 ml Coconut milk
- ½ chilli Green chillies
- 2 g Curry leaves
- ½ tsp Cinnamon
- ½ tsp Cardamom
- ½ tbsp Coconut oil
- ¼ tsp Salt
Method
- Cook the rice until tender; set aside.
- Warm the coconut oil, add cinnamon, cardamom and green chilli, and cook a minute.
- Add the beans, peas and cauliflower with a splash of water, cover and simmer 10 minutes until tender.
- Pour in the coconut milk and curry leaves, and simmer gently 5 minutes without boiling hard.
- Season with salt and serve with the rice.
