Ingredients
- 120 g Pumpkin
- 100 g Aubergine
- 80 g Potatoes
- 30 g Green peas
- ½ tsp Mustard seeds
- 1 tsp Cumin seeds
- ¼ tsp Fenugreek seeds
- ½ tbsp Sunflower oil
- 55 g Basmati rice
- ¼ tsp Turmeric
- ¾ tsp Sugar
- ¼ tsp Salt
Method
- Heat the oil and crackle mustard seeds, cumin and fenugreek seeds until fragrant.
- Add the pumpkin, aubergine and potato with turmeric and salt, and cook 5 minutes, stirring.
- Cover and cook over low heat for 15 minutes, stirring occasionally, until the vegetables soften and break down slightly.
- Add the peas and sugar, and cook 5 minutes more until everything is soft and well combined.
- Rinse the rice and simmer in twice its volume of water for 15 minutes; serve alongside.
