Mushroom donburi
Savoury simmered mushrooms and onion in a sweet soy sauce, spooned over rice.

Ingredients
- 220 g Mushrooms
- ¾ onion Onion
- 75 g Jasmine rice
- 1¼ tbsp Tamari (gluten-free)
- 14 ml Mirin (rice cooking wine)
- 1 tsp Sugar
- 5 g Ginger
- ½ tbsp Sunflower oil
- 12 g Spring onions
- ¾ tsp Sesame seeds
Method
- Cook the rice according to packet instructions.
- Soften the onion in the oil for 4 minutes, then add the mushroom and ginger and fry for 5 minutes.
- Stir in the tamari, mirin and sugar, and simmer for 4-5 minutes until the mushrooms are glossy and the sauce reduced.
- Spoon over the hot rice and scatter with spring onion and sesame seeds.
