Pancit bihon gulay (vegetable rice noodles)
Stir-fried rice vermicelli with tofu, cabbage and carrot in a light soy broth.

Ingredients
- 80 g Rice noodles
- 170 g Firm tofu
- 100 g Cabbage
- ¾ carrot Carrots
- 2 cloves Garlic
- 1 tbsp Soy sauce (reduced salt)
- 100 ml Vegetable stock
- ½ tbsp Sunflower oil
- ¼ lime Limes
Method
- Soak the rice noodles in warm water until soft, then drain.
- Heat the oil in a wok, fry the tofu for 4 minutes until golden, then set aside.
- Add garlic, cabbage and carrot, stir-fry 4 minutes until just tender.
- Add the noodles, stock and soy sauce, tossing for 4 minutes until the noodles absorb the liquid.
- Return the tofu, toss through and serve with a squeeze of lime.
