Ingredients
- 50 g Semolina (rava/sooji)
- 3 tbsp Sugar
- 2 tsp Ghee
- 8 g Cashews
- 6 g Raisins
- ½ tsp Cardamom
Method
- Dry-roast the semolina in half the ghee for 4 minutes until fragrant and light golden.
- Boil water separately, then carefully pour into the roasted semolina, stirring constantly to avoid lumps.
- Cook covered on low heat for 3 minutes until the water is absorbed.
- Stir in the sugar and cardamom and cook 3 minutes until glossy and thick.
- Fry the cashews and raisins in the remaining ghee and fold through before serving.
