Steamed rice-lentil cakes with a tangy, tamarind-spiced drumstick and toor dal sambar.

Ingredients
- 80 g Rice flour
- 25 g Urad dal
- ¼ tsp Fenugreek seeds
- 30 g Toor dal
- 40 g Drumstick (moringa pods)
- ¼ tomato Tomatoes
- 1 tsp Sambar powder
- 1 tsp Tamarind paste
- ¼ tsp Mustard seeds
- 2 g Curry leaves
- 1 tsp Asafoetida (hing)
- ½ tbsp Sunflower oil
- ¼ tsp Turmeric
- ¼ tsp Salt
Method
- Whisk rice flour, urad dal and fenugreek with water into a thick batter; steam spoonfuls in an idli mould for 10 minutes.
- Simmer the toor dal in water for 15 minutes until soft, then mash lightly.
- Add the drumstick, tomato, tamarind, sambar powder and turmeric; simmer 10 minutes until the vegetable is tender.
- Heat the oil, splutter mustard seeds, curry leaves and asafoetida, then stir into the sambar.
- Serve the warm idlis with the sambar.
