Ingredients
- 150 g Papaya
- 80 g Firm tofu
- 15 g Peanuts
- 30 g Green beans
- ½ tomato Tomatoes
- ½ lime Limes
- ¾ tbsp Soy sauce (reduced salt)
- 1¼ tsp Sugar
- 1 clove Garlic
- ¾ chilli Green chillies
Method
- Pan-fry the tofu cubes in a dry non-stick pan for 4 minutes until golden, then cool slightly.
- Pound the garlic, chilli and green beans lightly in a mortar, then add the tomato and bruise gently.
- Add the shredded papaya, lime juice, soy sauce and sugar, and pound and toss to combine.
- Fold through the tofu and peanuts and serve immediately.
