Vegetable suji upma
Semolina simmered with peas and beans, tempered with mustard seeds and curry leaves.

Ingredients
- 70 g Semolina (rava/sooji)
- 40 g Green peas
- 40 g Green beans
- ½ tsp Mustard seeds
- 3 g Curry leaves
- ½ chilli Green chillies
- ½ tbsp Sunflower oil
- ¼ tsp Salt
- ¼ lemon Lemons
- 5 g Coriander
Method
- Dry-roast the semolina in a pan for 3 minutes until fragrant, then set aside.
- Heat oil, splutter mustard seeds and curry leaves, then add chilli, peas and beans and cook 4 minutes.
- Pour in 200ml hot water and salt, bring to a simmer, then stir in the semolina in a steady stream, whisking to avoid lumps.
- Cover and cook on low heat for 3 minutes until fluffy, then finish with lemon juice and coriander.
