Ingredients
- 40 g Basmati rice
- 40 g Green lentils
- 30 g Dried pasta
- 60 g Chickpeas (tinned, drained)
- 90 g Chopped tomatoes (tinned)
- ½ onion Onion
- 1 clove Garlic
- ¼ tbsp Vinegar
- ½ tbsp Sunflower oil
- ¾ tsp Chilli flakes
- ¼ tsp Salt
Method
- Simmer the lentils in water for 15 minutes until tender; cook the pasta and rice separately until done, then drain.
- Fry the onion in the oil over medium heat for 10 minutes until deep golden and crisp; set half aside for topping.
- Simmer the tomatoes with garlic, vinegar and chilli flakes for 8 minutes to make the sauce.
- Layer the rice, lentils, pasta and chickpeas in a bowl, spoon over the sauce and scatter with the crisp onions.
