Mahshi kousa (stuffed zucchini)
Zucchini hollowed and stuffed with herbed rice, simmered in a light tomato broth.

Ingredients
- 1¼ courgettes Courgette
- 55 g Basmati rice
- 100 g Chopped tomatoes (tinned)
- ¼ onion Onion
- 6 g Parsley
- 3 g Mint
- ¾ tbsp Olive oil
- 1 clove Garlic
- ¼ tsp Salt
Method
- Hollow out the zucchini, keeping the shells intact.
- Mix the rice, chopped onion, parsley, mint, half the oil and salt for the filling and spoon into the zucchini shells, leaving room for the rice to expand.
- Pack the stuffed zucchini into a pot, pour over the tomatoes, garlic, remaining oil and enough water to half-cover.
- Cover and simmer gently for 25-30 minutes until the zucchini and rice are tender.
