Plátanos maduros con frijoles negros

Ingredients
- 200 g Plantain (ripe)
- 200 g Black beans (tinned, drained)
- ¼ onion Onion
- 1 clove Garlic
- ¼ lime Limes
- ½ tbsp Sunflower oil
- ¼ tsp Salt
- 5 g Coriander
Method
- Heat half the oil and fry the plantain slices for 3 minutes per side until deep golden; set aside.
- Warm the remaining oil and cook the onion and garlic for 5 minutes until soft.
- Add the black beans and a splash of water, and simmer 8 minutes, mashing a few beans to thicken.
- Serve the beans with the fried plantain, a squeeze of lime and coriander.
