Potaje de frijoles negros
A thick, garlicky Cuban black bean soup with peppers and cumin.

Ingredients
- 250 g Black beans (tinned, drained)
- ½ onion Onion
- 2 cloves Garlic
- ½ pepper Bell peppers
- ¾ tsp Ground cumin
- 50 g Brown rice
- ½ tbsp Olive oil
- ¼ tsp Salt
- 5 g Coriander
Method
- Simmer the brown rice in twice its volume of water for 25 minutes until tender.
- Warm the oil and cook the onion, pepper and garlic for 6 minutes until soft.
- Stir in the cumin, then add the black beans and a cup of water; simmer 12 minutes, mashing some beans to thicken.
- Season with salt and serve over the rice, finished with coriander.
