Rau xao dau hu (stir-fried vegetables with tofu)
Quick garlicky stir-fry of tofu with seasonal greens over rice.

Ingredients
- 60 g Jasmine rice
- 200 g Firm tofu
- 80 g Broccoli
- ¾ carrot Carrots
- ½ pepper Bell peppers
- 2 cloves Garlic
- 1 tbsp Tamari (gluten-free)
- ½ tbsp Sunflower oil
- ¾ tsp Toasted sesame oil
Method
- Cook the rice in a covered pan with water for 20 minutes.
- Heat the vegetable oil in a hot wok and fry the tofu cubes for 5 minutes until golden, then set aside.
- Add garlic and the vegetables to the wok, stir-fry for 4 minutes until just tender.
- Return the tofu, add tamari and toss for 1 minute to coat.
- Finish with a drizzle of sesame oil and serve over the rice.
