Sakkarai pongal (sweet pongal)
Festive sweet rice and moong dal pudding, slow-cooked with jaggery, cardamom and ghee.

Ingredients
- 45 g Basmati rice
- 20 g Moong dal (yellow)
- 40 g Jaggery
- 1½ tsp Ghee
- 10 g Cashews
- 8 g Raisins
- ½ tsp Cardamom
Method
- Dry-roast the moong dal briefly, then simmer with the rice in plenty of water for 20 minutes until very soft.
- Melt the jaggery in a little water over low heat, strain out any grit, and stir into the cooked rice and dal.
- Simmer 5 minutes, stirring, until well combined and thickened.
- Heat the ghee, fry the cashews and raisins until golden, then stir through with the cardamom.
- Serve warm.
