Ingredients
- 60 g Basmati rice
- 45 g Toor dal
- 50 g Drumstick (moringa pods)
- 40 g Pumpkin
- ½ tomato Tomatoes
- 1 shallot Shallots
- 1¼ tsp Sambar powder
- 1¼ tsp Tamarind paste
- ¼ tsp Turmeric
- ¼ tsp Mustard seeds
- 2 g Curry leaves
- 1 tsp Asafoetida (hing)
- ½ tbsp Sunflower oil
- ¼ tsp Salt
Method
- Cook the rice in plenty of water until tender; drain and set aside.
- Simmer the toor dal in water for 15 minutes until soft, then mash lightly.
- Add the drumstick, pumpkin, shallot, tomato, tamarind, sambar powder and turmeric, and simmer 12 minutes until the vegetables are tender.
- Heat the oil, splutter mustard seeds, curry leaves and asafoetida, and stir into the sambar.
- Season with salt and simmer 3 minutes; serve hot over the rice.
